    This is Alton's thick and chewy recipe; he also has a thin and a "puffy" recipe. These are the best ones-- and after years of using the Nestle Tollhouse recipe, this is the only one I now use.

    List of Ingredients




    2 sticks butter
    2 1/4 cups BREAD flour (this is one of the tricks to this recipe)
    1 tsp salt
    1 tsp baking soda
    1/4 cups sugar
    1 1/4 cups brown sugar
    1 egg
    1 egg yolk
    2 tablespoons milk
    1 1/2 tsp vanilla
    2 cups semisweet chocolate chips
    chopped nuts if desired (Alton doesn't use them, but I do)

    Recipe



    Melt the butter in saucepan or in the microwave. Sift together the flour, salt, and baking soda and set aside.

    Pour the melted butter into your mixer bowl. Add the sugar and brown sugar, and cream on medium speed; add the egg, yolk, milk and vanilla and mix until combined. Slowly incorproate the flour mixture until thoroughly combined. Stir in the chocolate chips and the nuts (if using.)

    The only annoying thing about the recipe is the next step: CHILL THE DOUGH. I would say at least 30 minutes. (Use the time to clean up the kitchen;) then, when the dough is chilled, preheat oven to 375 degrees. Alton uses a large ice cream scoop, but I make them a little smaller- scoop dough onto parchment-lined or sprayed baking sheets, and bake large ones for 12-14 minutes, smaller ones for 10.

    Makes 2 1/2 dozen large cookies, more smaller ones!
