    Recipe Introduction

    Note: This traditional Slovak cookie (ZAHZ-vor-ni-kee) must sit overnight before they are baked.

    List of Ingredients

    2 eggs
    2 egg yolks
    1/4 c. margarine, at room temperature
    2 c. powdered sugar
    2 1/2 c. flour, plus extra if necessary
    2 tsp. powdered ginger
    1 tbsp. baking powder

    Recipe

    Line baking sheets with parchment paper. In a large bowl using an electric mixer on medium-high speed, beat eggs, egg yolks and margarine until creamy. Add powdered sugar and mix until thoroughly combined.

    In a large bowl, whisk together flour, powdered ginger and baking powder. Add flour mixture to margarine mixture and mix well.

    On a lightly floured pastry board, knead dough well, adding flour if dough is sticky. Place dough in a large bowl, cover with plastic wrap and refrigerate at least 1 hour.

    On a pastry board using a rolling pin, roll dough to a 1/2-inch thickness. Cut dough with cookie cutters and transfer cookies to prepared baking sheets. Cover with plastic wrap and refrigerate overnight.

    When ready to bake, preheat oven to 350 degrees. Bake 10 to 12 minutes; cookies should double in height while baking, with the top half spongier than the bottom. Remove from oven, cool cookies on baking sheets for 2 minutes then transfer to a wire rack to cool completely.

    Makes about 3 dozen cookies.
