Lemon Tree Cookies

LEMON TREES ........But can be used with any cut out. Makes 2½ dozen at 74¢ per dozen. Prep: 10 minutes. Refrigerate: about 2 hours. Bake: 10 minutes
List of Ingredients
2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
2/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon grated lemon rind
1 Tablespoon lemon juice
Liquid Green food coloring
Lemon Glaze:
1 cup confectioners sugar
6 teaspoons lemon juiceRecipe
1. In medium bowl, whisk flour, baking powder, salt. In large bowl, beat butter, and sugar until smooth, 1 minute. Beat in egg, vanilla, rind, juice, On low, beat in flour mixture. Remove 1/2 of dough to bowl; tint green. Flatten each 1/2 of dough into 8 inch disc; wrap each in plastic. Chill 2 hours.
2. Heat oven to 350 degrees. On floured surface, roll out green dough, 1/8 inch thick. Cut out trees with 3 inch tree cookie cutter. Place on ungreased baking sheets. Gather scraps; reroll; cut out more trees. Repeat with white dough. chill 10 minutes. Using 1/2 inch round aspic cutter and flouring edge frequently, cut rounds from trees; put green circles in cutouts from white trees; put white circles in green trees.
3. Bake at 350 degrees until golden around the edges, 10 minutes.
4. GLAZE: mix sugar and juice. Brush on hot cookies; cool.
Notes: I cut the plastic tubing from the Playtex disposable nurser bottle inserts (the most inner core of the roll) to make the little circles. Don't even know what an aspic cutter is!! You don't even need to do this. I guess it just makes it look like snow covered trees with some green showing (the white cookies) and the green cookies look like some snow on the trees. Have someone help you with these. It cuts down on the stress and becomes FUN!
