List of Ingredients
Dough
12 tablespoons unsalted butter, softened
1/4 cup granulated sugar
1/4 cup confectioners' sugar
2 tablespoons grated lime zest
2 tablespoons fresh lime juice
1/4 teaspoon salt
1-1/2 cups all-purpose flour
Glaze
3/4 cup confectioners' sugar
1 tablespoon plus 2 teaspoons fresh lime juice
1 teaspoon grated lime zest
Recipe
To make the dough
In a large mixing bowl, cream butter and sugars until light and fluffy - no more than 3-4 minutes. Scrape down the bowl if needed. Add lime zest, lime juice, and salt- beat until combined. Mix in the flour, beating just until combined.
Shape dough into an 8-inch log on a piece of parchment paper. Flatten into a long rectangle with your hands to reach a size of 1 1/2" high by 2 1/2" wide. Working with the parchment papper, flatten each side to make an even surface. Refrigerate dough at least 1 hour to firm up.
Preheat oven to 350
Cut dough crosswise into 1/4" thick slices. Set raw cookies on parchment lined baking sheets. Bake until cookies are puffed and have a hint of golden color arond the edge - about 15 minutes. Transfer to a wire rack to cool completely.
For the lime glaze
In a small bowl, whisk together all ingredients until spreadable. Using back of a small spoon, spread about 1/2 teaspoon glaze on each cooled cookie.
