1/3 Cup butter
1/3 Cup white sugar
1 tsp grated orange zest
1 Cup flour
1 tsp baking powder
2 drops orange food colouring (optional)
1/4 cup fresh orange juice
2 tbsp white sugar
Recipe
Cream together the butter and 1/3 cup sugar. Add the zest. Add the baking powder, half the flour and half the juice, to which you have added the food colouring, if you are using it. Mix well and add the remaining flour and juice.
Shape the dough into 2.5cm/1" rounds and roll them in the remaining sugar. Place on lightly greased cookie sheets and flatten with a fork.
Bake at 180C/350F for 10 minutes. Remove from cookie sheets to a cooling rack and let cool completely.
Makes 18 cookies.
The dough can be frozen in cylinders, wrapped in freezer paper and frozen for up to a month. To bake, thaw overnight in the fridge and cut into 1/4" circles. Bake as directed above.
