Basic Recipe (this one is for Lemon Bites):

1 pkg (18.25-oz) lemon-flavored cake mix
1 egg
1 container (4-oz) frozen non-dairy whipped topping ~ thawed
1/2 C sifted confectioners sugar


Recipe



Preheat oven to 350°

In a large bowl, combine cake mix, egg & whipped topping (batter will be real stiff).

Drop teasponfuls of dough into confectioners sugar. Roll into 1-inch balls, using sugar to keep dough from sticking to hands.

Place balls of dough 2-inches apart on a geased baking sheet & bake 10-12 min's or until light brown on bottoms. Transfer to a wire rack to cool completely. Store in an airtight container.

Makes about 6 dozen.

VARIATIONS I've tried over the yrs....

Basically, alls yer gonna do is substitute whatever kinda cake mix you like for the lemon cake mix.

Three of our faves are:
Cherry Chip
Chocolate
Chocolate Mint ~ If I can't find a Chocolate Mint cake mix, I go with chocolate n add a smidge of mint flavoring to it!
