    Slovak Zazvorniki Cookies Petrova Ves

    Recipe Introduction


    Here is my family's recipe for zazvorniki cookies. My family, surname Pochily, came from Petrova Ves in Slovakia, and I still communicate with my second cousins there.


    List of Ingredients


    • 1 dozen egg yolks
    • 1 box (pound) powdered sugar
    • 1/4 lb. butter (one stick)
    • 3 tsp. baking powder
    • 2 tsp ground ginger
    • 3-1/2 cups to 4 cups flour (give or take)


    Instructions


    1. In a large mixing bowl, beat sugar, butter and eggs for 20 minutes. (Mom says that you can do them for 10 minutes if you're using an electric mixer, but I play it safe and do the full 20)
    2. Mix dry ingredients, then add them to the egg mixture. It will be thick.
    3. Turn out on a work surface and knead the dough until it is smooth and shiny. You might have to add more flour at this point.
    4. Lightly grease cookie sheets with butter.
    5. Roll and cut the dough until about 1/4 inch thick. Note that if you dough sticks to the surface, you need to add more flour and knead the dough some more to blend in this flour. Do not flour the work surface, however.
    6. Turn cookies over as you place them on the cookie tins.
    7. Let cookies stand, for a minimum of 4 hours to overnight.
    8. Bake at 350 degrees for 10 minutes until cookies are slightly brown on top. They will puff up slightly as they bake.
    9. Sift powdered sugar over them to serve. (Looks like snow)
    10. This recipe makes about 4 cookie sheets worth of cookies - and are usually cut with a special cookie cutter called a zazvorniki cutter, but you can use a variety of cutters.


    Final Comments


    Note: to keep cookies fresh, after they cool, place them in plastic bags with a half/slice of bread in each bag until you're ready to serve them. They should remain moist, almost cake-like.
