Makes about 3 dozen cookies
List of Ingredients
4 ounces (1 stick) butter, softened
3/4 cup packed brown sugar
1 egg, lightly beaten
1/4 cup pure maple syrup
1 teaspoon vanilla
1 cup quick-cooking oats
1-1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup dried cherries
2/3 cup chopped walnuts
Recipe
Preheat oven to 350 degrees. Lightly grease cookie sheets.
Cream butter and brown sugar in a large bowl. Stir in egg, maple syrup and vanilla. Combine oats, flour, baking soda and salt, then stir into butter mixture. Stir in cherries and walnuts until just combined.
Drop by spoonfuls onto baking sheets. Bake 10-12 minutes on middle and top racks of oven. Do not overcook. Cookies should be golden brown around the edges. Remove and cool on wire racks.
