2 medium apples (I use both Red Delicious and Granny Smith)
1/2 cup apple juice
7 oz. caramel candies, unwrapped
1 tsp. vanilla
1/8 tsp. ground cardamom (I use nutmeg)
1/2 tsp. ground cinnamon
1/3 cup creamy peanut butter
Recipe
Peel, core, quarter, and cut each apple into 20 wedges; set aside.
Combine apple juice, caramel candies, vanilla, nutmeg and cinnamon. Drop peanut butter, 1 tsp at a time, over ingredients in crock-pot and stir. Layer apple wedges over top. Cover and cook on LOW for 5 hours. Stir thoroughly, and cook 1 hour more.
Serve warm mixture over a slice of angel food cake or ice cream.
Note: Recipe may easily be doubled.
