1 5# pork roast
vegetable oil for browning
potatoes, quartered (or parsnips, if desired)
carrots, sliced in 1/2" chunks
celery, sliced in 1" chunks
green bell pepper, diced (optional)
6 tbsp. minute tapioca
2 tsp. beef bouillon granules
2 cups apple juice or cider
1/2 tsp. ground cinnamon
1/2 tsp. black pepper
1/2 tsp. salt
Recipe
Brown roast in hot oil.
Place vegetables in bottom of crockpot; sprinkle with tapioca & bouillon granules. Add juice & seasonings; then place roast on top, cover and cook 10-12 hours on low setting.
