    Crockpot Potato Soup

    List of Ingredients

    8 cups potatoes, peeled and diced (I left the skins on)

    1 small onion, chopped

    6 ounces bacon, cooked, drained and crumbled (left out 2 slices & subbed leftover HoneyBaked Ham)

    3 ounces cream cheese

    5 ounces fat-free cream cheese

    3 cans fat-free chicken broth

    1 can cream of chicken soup, condensed

    1/4 teaspoon black pepper

    Recipe

    1. In a 4-quart crockpot, combine the potatoes, onion and bacon.

    2. In a large mixing bowl, combine cream cheese; add remaining ingredients, stirring until blended.

    3. Add soup mixture to crockpot; stir to blend.

    4. Cover; cook on low heat for 10 hours. If you like, mash the potatoes slightly for a thicker soup.
