1 1/2 cups thick and chunky salsa
1 cup water
6 ounces tomato paste
1 package taco seasoning mix
3 pounds boneless beef bottom round roast (didn't have it; used eye of round trimmed of excess fat)
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons peanut butter
1/3 cup fresh cilantro, chopped
1/2 teaspoon of chili powder (not in the original recipe, but I added it by mistake)
Recipe
1. In 5-quart or larger slow cooker, combine first four ingredients. Rub beef with salt and pepper; add to cooker and spoon some of the sauce mixture over it.
2. Cover and cook on low 8 to 10 hours until beef is very tender when pierced. Remove to cutting board.
3. Stir peanut butter and cilantro into sauce. Slice meat across grain; serve with sauce.
