    Slow-Cooked Flank Steak

    1 flank steak (1-1/2 to 2 pounds)
    1 tablespoon taco seasoning mix, or to taste (can use more or less of package)
    1 (10-ounce) can Rotel tomatoes
    2 tablespoons white vinegar

    If the flank steak is too large to fit in your slow cooker, cut it into 2 or 3 pieces. Rub the meat with taco seasoning mix. Put flank steak in the slow cooker and add tomatoes and their juices, vinegar and additional taco seasoning, if desired.

    Cover and cook for 6 to 7 hours on low or 4 to 5 hours on high, or until the meat is tender and shreddable.

    Laurel's note: Mine cooked for about 10 hours. When I got home from work, I shredded the meat, put it in a Pyrex dish, poured the sauce/juices over the meat and cooked it, covered with foil, for another 30 minutes at 325° in the oven.
