Tortilla Casserole- Crock Pot

List of Ingredients
4 flour tortillas, divided
1 lb ground beef
1 envelope dry taco seasoning mux
16 oz canned refried beans
1 1/2 cups 2 percent cheddar, shredded
4 tablespoons sour cream, optionalRecipe
Tear 2 tortillas into pieces and line the bottom of the crock.
Spray the the inside of crock with nonstick spray. In a skillet, brown the ground beef and drain. Add taco seasoning mix. Layer the beans, meat, and 1 cup of the cheese, and sour cream if using, over the tortilla pieces. Place remaining tortilla pieces on top, and top with the remaining cheese. Cover and cook on low 3-4 hours.
This version serves 4, and is 12 points per serving.
Lighter version:
4 medium-sized fat free tortillas
1 lb cooked and drained ground turkey
one envelope taco seasoning
16 oz can fat free refried beans
1 1/2 cups 2 percent grated cheddar
4 tablespoons light sour cream
Proceed with recipe the same as above.
Serve with salsa, if desired.
The lighter version serves 4, for 9 pts. each.
