    List of Ingredients




    3/4 cup sugar
    1/3 cup flour
    1/4 tsp. salt
    2 cup milk
    3 slightly beaten egg yolks
    2 tbs. butter
    1 tsp. vanilla
    2 cups coconut, shredded (reserve a couple tbs. for topping)
    1 baked pie shell

    Recipe



    Combine sugar, flour, salt and slowly add milk in heavy saucepan.

    Stir constantly and bring to a boil. Let boil for 2 minutes stirring constantly. Remove from heat and add small amount of mixture to egg yolks and stir. Pour eggs into mixture and return to heat and boil for another 2 minutes stirring constantly. Remove from heat.

    Add butter, vanilla and coconut and stir. Pour into baked pie shell and let cool. Make meringue using the 3 leftover egg whites. Add 1/4 tsp. cream of tartar to whites and whip. When egg whites are whipped, slowly add 2 tbs. sugar. Top pie with meringue and sprinkle with coconut. Toast in oven until brown.
