This way each person can have his/her eggs the way he/she likes them -- from super runny to hard.
List of Ingredients
3 ounces shredded cheddar cheese, divided
2 cups refrigerated shredded hash brown potatoes
4 medium green onion, whole, chopped
1/2 teaspoon seasoned salt
1/8 teaspoon pepper
2 whole large eggs
1/8 teaspoon dried Italian seasoningRecipe
1. Heat oven to 400. Spray one 2-cup ovenproof bowls or ramekins for each serving with cooking spray. Reserve 1T of cheese per person for topping. In medium bowl, mix remaining cheese, potaotes, onions, half the seasoned salt, and the pepper. Press mixture in bottom and up sides of each bowl, leaving indentation in center.
2. Bake 25 to 30 minutes or until edges are golden brown and crisp. Remove from oven. Break egg into center of each cup. Sprinkle with remaining salt, Italian seasoning and reserved cheese.
3. Return to oven; bake 8 to 12 minutes longer or until eggs are set and of desired doneness.
Serves 2 (but can be increased easily)
