50 grams butter
6 sheets filo pastry
75 grams leg ham finely chopped
1 cup (250mls) cream
pinch ground nutmeg
1 tablespoon chopped fresh parsley
7 eggs (I used 9)
1/3 cup (40grams) grated cheese
Recipe
1. Preheat oven to moderately hot 200 degrees C (400 F) Brush a shallow baking tray with melted butter.
2. Brush one sheet of filo pastry lightly with melted butter. Repeat with the remaining pastry sheets and carefully lay in the tin, tucking in any overhanging edges. Sprinkle the ham over the filo to cover it.
3. Place the cream, nutmeg, parsley and 1 egg into a bowl and season with salt and pepper. Whisk together well.
4. Pour the mixture into the tin. Carefully crack the remaining eggs one at a time into the mixture so that they are evenly spaced and as intact as possible. Sprinkle the cheese over the top.
5. Bake the slice for 15 to 20 minutes or until set and pastry is golden and crisp. The whole eggs should be just set. Serve hot or cool.
