    PORTABELLA PIZZA LASAGNA

    3-4 large portabella mushrooms
    2 lbs. container of ricotta cheese
    2 eggs
    1 pack of pepperoni, ie..Hormel
    12 oz. bag of mozzarella cheese
    1 cup fresh shredded parmesan cheese
    2 jars Pizza Quick sauce or make yours homemade
    salt
    pepper
    parsley flakes
    Pam cooking spray




    Recipe

    Pre-heat oven to 350 degrees. Remove the seeds and stems from mushrooms. Slice portabella mushroom in thin slices, HORIZONTALLY rather than vertically (vertically is the way they are bought when presliced in the store).
    Put slices aside for now.

    In a large bowl, mix the ricotta cheese, 2 eggs, most of the Parmesan and half a bag of the mozzarella together. Then add salt, pepper and parsley flakes to taste. In another bowl mix both jars of the Pizza Quick Sauce with pepperoni slices. Spray a 9 X 7 X 2.5 in glass-baking dish (or similar size) with Pam.
    Now start the layering process. Begin by spreading a thin layer of sauce on bottom of dish. Place your mushroom slices on top of sauce, overlapping edges of mushrooms to prevent empty spaces. You may need to cut up a mushroom slice into smaller pieces to use for filling in empty spaces so you get a complete mushroom layer. Now add a layer 1/2 of your cheese mixture on top of the mushrooms. Next gently smooth a layer of 1/3 of your pepperoni sauce on top of the cheese. Repeat steps 1-4 until you get to your last layer (3rd layer) of mushrooms on top. Spread the last of your sauce directly on the top mushroom layer. Finally add the rest of your mozzarella cheese and then your Parmesan cheese on top of sauce.
    Cover dish with foil and place in oven for about an hour. Remove the foil a little after halfway. If lasagna is ready it should be bubbly around edges of dish.
