    Stufato (Beef in Red Wine)

    List of Ingredients

    2 lbs. beef chuck, cut in 1" cubes
    2 tbsp. olive oil
    2 onions, sliced or diced
    1½ - 2 cup dry red wine
    1 cup canned plum tomatoes
    6 cloves garlic, minced
    2 tbsp. fresh parsley, minced
    2 bay leaves
    1 tsp. dried basil, crumbled
    1/2 tsp. dried thyme, crumbled
    4 splashes worcestershire sauce (optional)
    salt to taste
    fresh ground pepper to taste

    Recipe

    Pat meat dry with paper towels. Heat oil in heavy saucepan over
    medium-high heat. Add meat and brown on all sides. Add onion and sauté until limp. Stir in 1 cup wine. Add tomatoes, garlic, parsley, bay leave, basil & thyme. Reduce heat, cover & simmer one hour. Add remaining wine and continue simmering for another hour. Discard bay leaf. Season with wooster, salt & pepper and serve over egg noodles. (Omit the noodles if on low-carb)

    Stufato freezes very well.
