    Dijon-Dill Marinade for Fish

    List of Ingredients

    1/4 c. fresh lemon juice
    1 Tbsp. Dijon mustard
    1/2 c. olive oil
    1 c. fresh dill, chopped fine
    1/2 tsp. grated lemon peel fresh ground pepper
    1/2 tsp. sugar or Equal
    dash to 1/4 c. white wine, depending on amount of fish

    Recipe

    Combine lemon juice and mustard. Whisk in oil; pouring in a steady stream.
    Mix in dill, lemon peel, a few grinds of pepper, sugar and a little wine.
    Marinate for 1 to 2 hours, basting with marinade while fish is cooking.
    Delicious on fresh tuna. Broil fish 5 minutes on each side if 1 inch thick.

    Low fat, low cholesterol and good too!
    Note: Use with fresh tuna, marlin, red snapper, shark,
    swordfish or scallops.
