    Pineapple-Bourbon Pork Marinade

    Recipe Introduction

    If the bourbon is too much for you, just add less. The smell is overpowering when you first add it to the marinade, but by the time you are ready to roast your loin, it will have mellowed and have a kind of sweet smell. This would also be great on the grill.

    List of Ingredients

    1 Cup pineapple juice
    1/4 Cup bourbon
    1/2 tsp. onion powder
    1/4 tsp. garlic powder
    1/4 tsp. salt
    1/2 tsp. pepper
    2 Tbs. soy sauce
    3 Tbs. brown sugar

    Recipe

    In a plastic zipping bag (one large enough to fit your roast, or use a bowl, but bags are so much easier) combine all ingredients, squishing bag to incorporate thoroughly.

    Add pork loin, and marinate for 2-3 days, turning once or twice a day. Roast in oven at 350F until the internal temperature reaches 160F-165F...it will be so tender it will cut like butter!
