Mix the crepe ingredients till smooth. heat oil in a frying pan, fry some batter on one side. flip onto plate fried side up. separate all the batter rounds with wax paper so they don't stick.
Mix the filling, then put on the edge of each crepe (depending on how much you want to fill them) and fold in and roll up. Then fry the unfried outside on both sides till golden brown. this should make 10 - 12 blintzes.
The filling is most probably too much, but it also tastes good on cooked pasta!
