    1/2 cup rice, cooked
    1/2 pound beef sirloin steak, cut into 2" strips
    1 tablespoon vegetable oil
    1/2 flour tortilla, cut into strips
    1/2 pound frozen stir-fry bell peppers and onions
    1/4 cup frozen whole kernel corn
    1/2 cup thick & chunky salsa
    1 tablespoon lime juice
    1 15-oz. can canned black beans, drained and rinsed
    1 tablespoon chili sauce
    1/4 teaspoon ground cumin
    1 tablespoon fresh cilantro, chopped

    Recipe



    1. Heat 12-inch nonstick skillet over medium-high heat.

    2. Add oil; rotate skillet to coat bottom.

    3. Cook tortilla strips in oil 1-2 minutes on each side, adding additional oil if necessary, until golden brown and crisp. Drain on paper towels.

    4. Add beef to skillet; stir fry over medium high heat 4-5 minutes or until beef is brown. Remove from skillet.

    5. Add bell pepper mixture and corn to skillet; stir fry 1 minute. Cover & cook 2-3 minutes, strring twice, until crisp-tender. Stir in cumin. Cook 1 minute. Add salsa, lime juice, beans, and chili sauce. Return beef to pan.

    6. Cook 2-3 minutes, stirring occasionally, until hot.

    7. Stir in cilantro. Serve over rice.

    Notes: I generally omit the tortilla strips (nice touch if you're serving company, but too much work for me for my gang). I also substitue fresh onions and bell peppers (green, red, whatever colors I can get on sale) for the stir-fry mix since I can't find that in the markets here. Also if you increase this recipe, you may not need to increase the beans. They were an addition I made after the first go around with this recipe.
