Sweet & Sour Pork over Leeks

1 lb. boneless country-style pork ribs, cut into cubes
1/4 cup brown sugar
1/2 cup soy sauce
1 bunch leeks, cleaned and left whole
1 (8-oz.) can pineapple chunks, drained
1 green bell pepper, cut into strips
Recipe
1. Marinate pork overnight in brown sugar and soy sauce.
2. In the morning, clean leeks and place in bottom of slow cooker. Pour marinade and pork cubes over leeks. Add pineapple and green bell pepper. Cook on Low for 6 to 8 hours.
Serves 4.
