2 large Granny Smith apples, or any tart cooking apples (for about 3 1/2 cups slices)- do not peel
2 t bottled garlic
1 T butter, optional
8 ounces Canadian bacon

Heat the oil over medium heat in an extra deep, 12 inch nonstick skillet. Peel the onions, cut them in half, and then cut the onion halves into crescent-shaped slices about 1/4 inch wide, adding them to the skillet as you chop. Stir from time to time.
Cut the apples into quarters, remove the cores and then cut the apples into 1/4 inch slices. Add the apples to the skillet, and raise the heat to medium high. Cook, stirring frequently , until the apples begin to soften, about 2 minutes. Add the garlic. Stir and cook for 30 seconds and remove the skillet from the heat.
Pour the apple mixture into a serving bowl. If using the butter, cut it into small pieces, place over the apples and toss till it melts. Set aside.
Return the skillet to the heat. Add half the Canadian bacon slices to the skillet. Cook 1 minute on the first side, turn and cook 1 minute on the other side. Remove the bacon from the skillet and repeat with the other Canadian bacon slices.
To serve, place about 4 slices bacon on each of 4 dinner plates. Divide the apple mixture and serve it alongside the bacon.
