Pasta Primavera w/Sundried Tomato Sauce

List of Ingredients
8 oz whole wheat pasta spirals
1 28 oz can crushed tomatoes w/ puree
1/2 cup chix broth
1/2 cup sun- dried tomatoes
2 cloves garlic chopped
2 T balsamic vinegar
1 T olive oil
1 tsp dried oregano
1/4 tsp pepper
2 cups cauliflower
1 green pepper chopped (or minced)
1 cup baby carrots chopped
1 cup frozen peas
1 T basil
1/4 cup feta (I hate feta so I use parmesan)
Recipe
Cook pasta, drain and return to pot. In a blender puree the crushed tomatoes, broth, sun tomatoes, garlic, vinegar, oregano, pepper and oil. Transfer to a sauce pan on medium heat. Cook until sauce bubbles. Add cauliflower, bell pepper, carrots and peas. Simmer for 5 mins. Add basil and pour over pasta and toss to combine. Top with feta or cheese of choice.
