1 cup cooked rice
1 or 2 cloves garlic minced
1 Tbls. olive oil
1 (14 oz.) can diced tomatoes
2 cups finely chopped rinsed kale leaves

In a heavy skillet cook the garlic in the oil over medium heat, stirring , about 1 minute, add the tomatoes and the kale and cook the mixture stirring occasionally for about 5 minutes or until the kale is tender.
Combine the hot rice, kale mixture and salt and pepper to taste.
