    Salmon & Green Bean Pasta Salad

    List of Ingredients




    8 ounces pasta shells or macaroni
    4 ounces fresh green beans, 1/2 dice
    1/4 cup cottage cheese
    1/4 cup plain yogurt
    1 tbsp. lemon juice
    1/4 cup coarsely chopped fresh dill
    2 7¾ oz cn canned salmon, drained
    black pepper to taste
    lettuce leaves if desired

    Recipe



    Cook pasta according to package directions; drain & rinse under cold running water. Drain again & set aside.

    Blanch green beans in boiling water for 2 minutes. Drain and rinse under cold running water. Drain again and set aside.

    Purée cottage cheese in blender or put through a sieve. Combine with yogurt and lemon juice; mix well

    In a large bowl, combine pasta, green beans, yogurt mixture and dill; stir to mix. Discard skin & bones from salmon and break into chunks; add to salad and stir gently to mix. Add pepper to taste. Line serving plate with lettuce leaves and mound salad on top.
