    Vegetable Pasta Salad

    Recipe Introduction

    This recipe isn't quite as eccentric as the other ones, but it is one of my favorites. I make the whole recipe and take it for lunch the rest of the week!

    List of Ingredients

    1 eggplant, peeled & cubed
    1 onion chopped
    3 cloves garlic
    1-28 oz. can diced tomatoes
    fresh or dried basil
    salt & pepper
    1 lb. penne pasta (or whatever you like)

    Recipe

    Saute the eggplant in olive oil until tender. In another pan, saute the onion & garlic until soft and add the tomatoes, salt & pepper and basil, if using dried. Cover and simmer for 15 minutes, then add basil if using fresh. Combine cooked pasta, eggplant and tomato mixture and sprinkle with Parmesan cheese, if desired.
