List of Ingredients
4 chicken breast halves
1/2 lb. fresh mushrooms, sliced
3 Tbsp. butter
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
1 ripe avocado, peeled, pitted and rubbed with 1 T lemon juice to prevent browning
1/2 cup Monterey Jack cheese
Recipe
Melt butter in skillet and saute mushrooms. Remove mushrooms. Combine flour with salt and pepper and coat chicken. Place floured chicken in skillet and cook until golden brown on each side about 12 minutes.
Top each fillet with avocado slices and a slice of Monterey Jack cheese. Cover skillet and cook gently until cheese melts. Spoon mushrooms over top and serve. Serves 4.
