Chicken Breasts with Pecan Stuffing

4 chicken breasts
lemon juice as needed
6 tbsp. melted butter
3 cups toasted bread crumbs
1/3 cup finely chopped onion
1/2 cup finely diced celery
3/4 cup chopped pecans
1 tsp. salt
1/8 tsp. black pepper
1/4 cup water
Recipe
Brush chicken breasts on both sides with lemon juice and 2 tbsp. melted butter. Combine remaining 4 tbsp. butter with other ingredients. Toss lightly. Make 4 mounds of stuffing and arrange on squares of heavy duty foil.
Place chicken, skin side up, on mound of stuffing. Fold foil securely around chicken to make individual packages. Bake at 350° for 40 minutes. Increase to 400°. Fold back foil and bake for 10 minutes longer or until brown.
Or save time by putting all the dressing in one pan, placing the chicken on top and covering it with foil - proceed as directed.
