    List of Ingredients




    2- 6oz cans Orange Juice Conct.,thawed
    1/2 cup plus 2 T. lime juice
    1/2 cup honey
    3 jalapeno peppers-seeded and chopped
    5 garlic cloves, minced
    2 T. course cracked coriander seeds
    1 T. grated lime zest
    1/2 tsp salt
    1/4 tsp fresh ground Black Pepper
    2 lbs boneless Chicken Or Pork, cut to 1 1/4" cubes
    1 red pepper seeded and cut into 1" cubes
    1 green pepper seeded and cut into 1" cubes
    1 large red onion, cut into 1" pieces
    2 small zucchini, cut to 3/4" slices
    8-oz fresh mushrooms
    3 limes cut into wedges

    Recipe



    In a bowl, combine first 9 ingredients; mix well.
    Pour half the marinade into a large ziploc bag, and add meat.
    Toss to coat. Pour remaining marinade in another baggie, add
    vegetables and toss to coat. Refrigerate for 6-8 hours turning occasionally.
    Drain meat and discard marinade. Drain vegetables and reserve marinade for basting. Thread meat, veggie, lime wedge onto skewers. Grill as desired. 8 servings
