Chicken Quesadillas

List of Ingredients
10 flour tortillas
2 cups chopped or shredded chicken
1 can diced tomatoes and green chiles (optional)
2 cups shredded cheese- Mexican blend is great
Toppings: shredded lettuce, chopped tomatoes, etc. Recipe
Spray a non-stick skillet with cooking spray; place a tortilla in and heat just a few seconds, add the chicken and cheese, tomatoes if using, and whatever toppings you want, place another tortilla on top and press down with a spatula. Flip over after cheese begins to melt; heat the other side until completely melted. Repeat until you've made 5 quesadillas. (These can be held in a barely warm oven, in foil, with no problem while you are making them all.)
Cut each quesadilla into wedges, garnish with sour cream if desired. I serve this with guacamole. (The REAl cheese to use in quesadillas is a wonderful, white goat cheese, and there are also "quesadilla cheeses" that are good, but may not be available in your area. I'm in S. Texas).
