2 lbs chicken tenders or chicken breasts cut into strips or chunks
3-4 cups corn flakes or Special K (I used a mix of them)
Parmesan Cheese (powdered works best)
Paprika
Curry Powder
Seasoning salt
Pepper
2 cups flour
3-4 eggs
spicy brown mustard
vegetable oil as needed to to fill skillet 1/4 inch deep
Recipe
Pour flour into a small bowl or ziploc bag. In another ziploc bag pour cornflakes, parmesan, curry powder, paprika, seasoning salt and pepper and crush with a rolling pin. Toss the (closed) bag around to mix ingredients well.
Mix the eggs and mustard in a bowl with a fork until well blended but not frothy.
Heat oil in pan over medium to medium high heat.
Dip a chicken strip into flour...then egg mixture...then the cornflake mix, coating well.
Place each strip into pan carefully and cook until chicken is white all the way through. I estimate about 8-10 minutes but you may want to have a "tester piece" to check to be sure (I usually make it my thickest piece).
Serve with your favorite dippin' sauce and enjoy!!
