Chicken a la King w/ just a little Kick

List of Ingredients
3 - 4 tbsp. butter (or roast chicken drippings is even better!)
1/2 onion, diced
1/2 green pepper, diced
4 oz. fresh mushrooms, sliced
1 small jar pimentos, drained
1/4 cup flour
1 can evaporated milk (not the sweetened condensed kind)
1 healthy "glug" dry sherry (mebbe 2-3 tbsp?)
1½ tsp. chicken bouillon granules
salt to taste (easy on the salt, since the bouillon is salty)
black pepper to taste
red pepper to taste (not cayenne)
1½ - 2 cups diced cooked chicken Recipe
Sauté onion, pepper & mushrooms in butter/drippings for a coupla minutes. Add pimentoes.
Blend flour into the canned milk until smooth; add to sautéed vegetables; add sherry, bouillon & seasonings, cook & stir until it begins to thicken.
Add chicken & warm to serving temperature. Serve over rice or toast. (we had it with our usual combo of brown & wild rice & it was delicious)
