    Chicken & Rice

    List of Ingredients

    1 whole chicken, cut up, or 8 bone-in pieces of your choice
    flour for coating
    1 can chicken broth
    2 cups rice
    salt and pepper to taste
    oil
    chopped parsley or parsley flakes

    Recipe

    Preheat oven to 375°. Place about 3 tablespoons oil in pan, enough to coat bottom. Place pan in oven to heat oil for a minute or two. Meanwhile, salt and pepper chicken pieces and lightly coat with flour. Place them skin side down in the heated oil; return to oven for 20 minutes. Remove from oven; take chicken out of pan and pour in the rice. Add water to chicken broth until you have 4 cups liquid. Stir into rice. Return chicken to pan, skin side UP- on top of rice/water mixture; it looks very watery but this is correct. Bake another 40 minutes. Rice will cook up around the chicken pieces and look very pretty. Sprinkle a little parsley over the top for color.
