    Chicken in mushroom/wine sauce

    List of Ingredients




    2 boneless chix breasts
    seasoned flour for breading
    1/2 lb sliced mushrooms
    1/8 t garlic powder
    2-3 t flour
    salt and white pepper to taste
    3/4 cup dry white wine
    12 oz evaporated milk or heavy whipping cream
    1/2 cup tomato juice
    pasta of choice

    Divide chicken breasts into 4-6 servings; pound to flatten if desired. Dredge in flour, brown in butter. Remove chix from pan and add mushrooms. Saute until soft; add flour, garlic powder, salt & white pepper. Cook 2-3 minutes, stirring constantly. Add wine, milk or cream, and tomato juice. Continue cooking until mixture thickens, stirring constantly. Return chix to skillet and cook 10 to 15 minutes longer. Serve over pasta.
