Chicken with Artichokes & Mushrooms

List of Ingredients
3 lbs boneless, skinless chicken breasts
1/2- 9oz pkg frozen artichoke hearts, thawed and sliced
flour
vegetable oil
1/2 lb sliced, fresh mushrooms
1/2 cup butter
1 cup white wine
1 tsp chopped garlic
salt and pepper
Opt: 2 tsp chopped Italian parsley
Recipe
Cut chicken into strips 1/2” wide. Dip in flour and shake off excess. Saute a few at a time in hot vegetable oil until golden brown. Remove chicken to a warm platter and pour off remaining oil.
Add butter, garlic, artichoke hearts and mushrooms to pan. Simmer for a few minutes. Add wine, salt and pepper to taste and Italian parsley. Mix thoroughly. Simmer for 5 to 10 minutes or until liquid is almost gone. Serve sauce over chicken.
Note: One time I didn’t have any white wine so I substituted chicken broth. When it was almost finished I added a small splash of dry sherry (dry Marsala would also do) and it was very good. Serves 6 to 8.
