Cordon Croquettes

Recipe Introduction
Scrumptious the first day, but even better the next day as a sandwich with the cranberry sauce standing in for mayo/mustard.
List of Ingredients
1 pound ground turkey
1 rib celery, finely chopped
1 large shallot, finely chopped (forgot to buy it so I threw in a generous teaspoon of minced garlic)
1/2 teaspoon poultry seasoning
1/2 teaspoon paprika
3 slices white bread, finely chopped (I used my 35-calorie-a-slice multigrain bread instead)
1/2 cup 1% lowfat milk
1 large egg
1/2 cup grated Parmesan cheese (I used the kind in the green canister, KWIM)
2 tablespons flat leaf parsley finely chopped (I used my freeze dried stuff)
4 slices ham (I used Black Forest)
1/4 pound Swiss cheese, thinly sliced
1/2 cup dry breadcrumbs (I used the seasoned variety as that was all I could find in the pantry)
Olive oil for frying

1. In medium bowl, combine first five ingredients. In small bowl, combine bread and milk, then squeeze the crumbs a you transfer them to the meat mixture. Mix in egg, parmesan, and parsely. Season with salt and pepper. (OK, I did this differently because I forgot to put the bread in the milk. I mixed everything together except the milk. I added just enough milk to make the mixture moist -- maybe 1/4 cup at the most).
2. Spread a foot long piece of wax paper on work surface. (I put mine in my 8-inch square baking dish; you'll see why in a minute.) Using a rubber spatula (I used my hands), spread half the meat mixture on wax paper to form 8-inch square (now you see why I used the baking dish; the wax paper came up high enough all the way around that I didn't need to wash the dish after). Top with ham then cheese then remaining meat mixture, forming the same square shape. Seal the edges to enclose. Cut into 4 squares and coat each square in dry bread crumbs. (You may want to try and seal the cut edges before you dredge them in the bread crumbs.)
3. In large skillet, heat 1" of olive oil (I didn't use that much -- maybe 1/2") over medium high heat. Add patties and fy, turning once until browned, about 10 minutes (I did mine in batches of 2). DRain on paper towels. Sprinkle with salt. Serve with cranberry sauce.
Serves 4 (you may want to double it so you have leftovers for sandwiches)
