1 cup sliced onion, separated into rings
1/2 cup chopped fresh cilantro
1/2 cup plain yogurt (fat-free is fine)
2 tablespoons ground cumin
1/4 tsp. salt
1/4 tsp. cayenne pepper
2 cloves garlic, crushed
3 pounds chicken breasts and thighs, bone-in
cooking spray
1 tsp. grated lemon rind

Place chicken pieces in a large bowl; combine first 7 ingredients and pour over chicken. Cover and marinate in refrigerator for 3 hours or so, stirring a couple of times.
Preheat oven to 350 degrees. Spray a 13x9" pan with cooking spray and place chicken pieces, coated with marinade, in pan. Sprinkle lemon rind over pieces. Bake 35 minutes; turn over, and bake another 35 minutes, or until done.
Note: boneless skinless breasts can be used; cooking time will be less.
