3 pounds cooked chicken -- deboned
1 mango -- peeled and sliced
3 tablespoons lemon juice
4 stalks green onions
1 cup celery -- chopped
3/4 cup mayonnaise
2 teaspoons curry powder
1/2 teaspoon cumin
1 cup slivered almonds
2 tablespoons parsley -- chopped
Recipe
Cut chicken into bite sized pieces. Slice mango into 1" pieces. In a large bowl, toss together chicken, mangos, lemon juice, celery and onions. Mix mayonnaise, curry and cumin. Add to chicken and mix well. Serve on a bed of lettuce, garnish with nuts and parsley.
