    Festive Chicken w/Cranberry Orange Sauce

    List of Ingredients

    Chicken:
    1/2 cup all purpose flour
    1/4 teaspoon salt
    Dash pepper
    2 boneless skinless chicken breasts
    2 tsp olive oil or vegetable oil

    Cranberry Orange Sauce:
    1 cup fresh or frozen cranberries
    1/2 cup orange juice
    2 tablespoons brown sugar
    1 teaspoon grated orange peel
    2 tablespoons chopped pecans
    1 clove garlic minced
    1 tablespoon butter or margarine
    1 bag fresh spinach

    Recipe

    In a resealable bag combine flour sugar salt and pepper. Flatten chicken to about 3/8-inch thickness, place in the bag and shake to coat. In a skillet cook chicken in oil for 3 min. on each side or until the juices run clear. Remove from pan and keep warm.

    Add cranberries and orange juice to the skillet. Cover and cook over medium heat for about 5 min. or until cranberries pop. Add brown sugar and orange peel and cook 1 min. longer. Stir in pecans and remove from the heat.

    In another skillet sauté garlic in butter until tender. Add spinach and sauté for 1 min or until spinach begins to wilt (I did it about 3 minutes) Add spinach to plate and top with chicken and cranberry sauce.
