8 chicken thighs or 4 breasts
salt and pepper to taste
8 tablespoons (1 stck)of butter
4 cloves of garlic, chopped
2 cups fresh bread crumbs
1 cup freshly grated parmesan cheese
Recipe
Preheat the oven to 350.
Season the chicken pieces with the salt and pepper.
In a small saucepan, melt butter with the garlic and pour into a shallow bowl.
In a pie plate or shallow bowl, mix bread crumbs with the cheese. Dip the chicken pieces one at a time, into the garlic butter, coating well on all sides. Then dip into the bread crumb mixture, patting them so the coating is thick.
Place the chicken pieces on a rack in a roasting pan and pat on any remaining bread crumb mixture. Drizzle any remaining garlic butter over the chicken.
Bake for one hour, or until crisp and golden brown, basting several times with pan juices. Serve hot.
