Glazed Sage-Roasted Chicken

1 roasting chicken, giblets removed
2 bunches fresh sage, divided
1 orange, quartered
15 1/4 ounces canned apricot halves
1/2 cup orange juice, frozen concentrate
Recipe
1. Preheat oven to 350. Slide hand between skin and breast meat to loosen skin. Place one bunch of sage leaves under skin. Place remainder of leaves and orange quarters in cavity of chicken.
2. Tuck wing tips under and tie legs with kitchen string. Place on rack in roasting pan. Roast for 1hour.
3. Meanwhile, drain apricots, reserving 1 cup of juice (add water to make 1 cup, if necessary). Mix juice with orange juice concentrate. Pour over chicken after 1 hour of roasting. Place apricots around chicken and continue roasting 1-1 1/2 hours.
4. Remove pan from oven; cover chicken loosely with foil and let stand 20 minutes before carving. Remove apricot halves and serve with chicken. Skim fat from drippings and serve with chicken.
Chicken comes out very moist and flavorful. Enjoy.
