Heat oil in a skillet over medium high heat and add onion, garlic and ginger root. Saute till golden. 2. In a bowl mix the coconut milk, curry and chili powder and salt, then add to skillet. 3. Reduce heat to medium and stir mixture constantly for 2 minutes. 4. Add chicken, cover and let come to a boil. 5. Add water and simmer till chicken is tender, approximately 10-15 minutes (this will depend on the size of your chicken pieces.)
