    Low Carb Chicken Salad Chinois

    2 C Cooked Chicken -- Cut-Up
    1/2 C Chopped Zucchini
    1/2 C Radishes -- Sliced And Halved
    1/4 C Plain Yogurt
    1 Tbsp Soy Sauce
    1/4 Tsp Equal® Sweetener -- Can Adjust
    1/2 Tsp Ground Ginger
    3 C Shredded Lettuce With A Few Spinach Leafs


    Recipe

    In a bowl combine chicken, zucchini, and radishes. In a cup combine yogurt, soy, equal, and ginger. Pour over chicken mixture, coat evenly. Refrigerate at least 2 hours, then toss gently to coat. Place on bed of lettuce.
