Garlic Roast Chicken from Millie

3 Heads of garlic, peeled
3½ lb Chicken
Salt & pepper to taste (I use cracked pepper; red,black,white)
1 bunch Fresh thyme
1/2 Lemon
melted butter as needed
1 C chix broth

Preheat oven to 425°.
Slice 20 of the garlic cloves into slivers. Leave the remaining cloves whole.
Rinse cavity of chicken and dry (I drizzle with melted butter n give a good massage both under skin n on then...), season with salt and pepper (make sure to massage in real good).
Gently pull the skin away from the breast and slide in some of the thyme sprigs and the garlic slivers (I stuff with garlic ~ both back & breast). Tuck the lemon, (I like to lay some thyme in first actually as well as some garlic, then...) the remaining thyme and a few garlic cloves into the cavity n drizzle a bit of melted butter inside over lemon n seasonins and place the chicken in a roasting pan. Scatter any remaining garlic around the chicken. Add 1 C chix broth.
Place chicken in the oven, reduce heat to 350°F and roast for about 1 hour, or until juices run clear. (basting every 15 minutes)
