Peanut Chicken

Add 1-2 cups of chicken stock or canned chicken broth to a small sauce pan. Add 2-3 tablespoons of soy sauce to chicken broth. Add 2 tablespoons of peanut butter to chicken broth and stir until completely mixed. If sauce is too thin, thicken with 1 tablespoon of corn starch mixed with just enough water to make it liquid (this is called a "slurry").
Slowly add "slurry" to the mixture with whisking. Add 1 ounce 2-3 tablespoons of cream and mix well. Pour through a small mesh strainer into a container fro later use.
Place chicken breasts in a baking dish and drizzle a small amount of soy sauce over them. Paint the chicken with the peanut sauce and place into oven at 350 degrees for approx. 8-10 minutes. Internal temperature of chicken must be at least 160 degrees before serving.
