Red Wine Chicken w/Garlic & Thyme

Even if you are not that keen on red wine, this is a lovely meal and really very easy. Although sounding unusual, this is a winner every time I serve it. For 4 people I stuff a whole chicken with the garlic and thyme and use a whole bottle of wine etc. When the chicken is cooked, I just roughly chop it into 4 and serve as below.
List of Ingredients
4 chicken pieces
1/2 red wine
1 Tbsp runny honey
4 cloves of garlic peeled
small handful of fresh thyme
freshly ground black pepper
Recipe
Preheat oven to 350 deg F
In an unperforated oven bag, place the chicken, garlic and thyme. Over the chicken, drizzle the honey, black pepper and pour over the 1/2 bottle of red wine.
Tie up bag and place in a roasting dish with 1 small hole in top of bag to allow the air to escape. Cook for about 45 mins to 1 hour, giving the bag a shake every now and then.
When the chicken is cooked, strain the red wine and chicken juices into a saucepan. Return chicken to oven to brown further. Thicken juices into a sauce with a heaping Tbsp of cornstarch mixed into a paste with a little water.
Serve chicken on a bed of creamy mashed potatoes that have been cooked in good chicken stock and garlic. Drizzle with sauce and add broccoli or the green vegetable of your choice for color.
