Roast Chicken w/Orange, Lemon & Ginger

List of Ingredients
1 Roasting chicken, five pounds
1 Lemon
1 Orange
1 Lemon zest
1 Orange zest
3 tablespoons Ginger, grated
1/4 cup Lemon juice
1/2 cup Orange juice
3 tablespoons Honey
1/4 cup Olive oil
1 teaspoon Thyme
1 dash Salt and pepper
Recipe
Preheat oven to 350 degrees.
Clean the inside of the chicken with water and pat dry. Cut the one lemon into quarters and rub one of them on the outside of the chicken.
In a small bowl, take the orange and lemon zest and mix with one tablespoon of ginger. Rub the mixture into the cavity of the chicken. Take the orange and lemon quarters and place them in the cavity as well. Place the chicken on a roasting rack and put into the oven.
In another small bowl, add the remaining juices, thyme, olive oil, honey and ginger and mix. Baste the chicken several times during the roasting period.
Roast until chicken juices run clear. Take out of the oven. Let rest for 20 minutes and carve.
